How to use it

  1. Add your dishes. One row per dish, drink or sauce served on its own. Name it the way it appears on your menu, so guests can match the two.
  2. Tick the allergens. For each dish, tick every one of the 14 allergens it contains, including those in sauces, dressings and garnishes.
  3. Choose the languages. The chart is printed in the language you choose, with an optional second language under each allergen name.
  4. Print or save as PDF. Use the print button; your browser can print the chart or save it as a PDF. It fits on landscape A4.

Where to put the chart

EU law requires restaurants to make information on the 14 allergens available for every dish; each country decides how. In Ireland, for example, the FSAI accepts allergen information beside each menu item or in one or more clearly visible places, as long as guests can find it without asking. Update the chart every time a recipe, supplier or special changes. An out-of-date chart is a safety risk, not only a paperwork problem. Keep the date at the top current.

Keeping it up to date without reprinting

A printed chart has to be redone after every change. On a digital allergen menu, allergens sit on each dish and change everywhere at once, in all 12 menu languages, and guests can declare their allergies before they order.

What are the 14 allergens on an allergen chart?

Cereals containing gluten, crustaceans, eggs, fish, peanuts, soybeans, milk, nuts, celery, mustard, sesame, sulphites, lupin and molluscs: the list in Annex II of EU Regulation 1169/2011.

Is a printed allergen chart enough?

It depends on your country. In Ireland the FSAI accepts written information in one or more clearly visible places. Check your food safety authority’s rules, and keep the chart up to date.
